    2 leeks, thinly sliced
    4 ounces celery, chopped
    2 portabello mushrooms, diced
    1 medium onion, diced
    1 tbsp olive oil
    4 large tomatoes, chopped
    4 cloves garlic, diced
    1 can cannellini beans, rinsed
    1/2 cup uncooked orzo
    8 ounces cauliflower, cooked and processed/pureed


Saute onions, leeks, celery and mushrooms in olive oil. Add the rest of the veggies and simmer. Add beans and orzo 30 minutes prior to serving. Can simmer for a couple hours, adding water as needed. Makes 8 generous servings.

  • this is a wonderful soup and the numbers are pretty impressive too! Good health in a bowl.. I added quinoa in place of the orzo - 4/6/08
