Introduction

Ingredients

    1/4 cup fat free mayonnaise
    1/4 cup fat free sour cream
    1/2 cup cilantro, chopped
    1 tsp. grated lime zest
    juice of one lime
    1/2 tsp. ground cumin
    1/4 tsp ground red pepper
    1 lb. cooked chicken breast, cut into bite sized pieces
    1 can black beans, 15oz., drained and rinsed
    1 1/2 cups frozen corn kernels
    1 red bell pepper, diced
    1/2 red onion, chopped
    lettuce - optional
    flour tortillas - optional

Directions

In a large bowl, mix the mayo, sour cream, cilantro, lime zest, lime juice, cumina dn ground red pepper. Stir in the chicken beans, corn, bell pepper and onion. Serve over lettuce or on toritillas, or just eat plain.

Serving Size: Makes atleast 8 1-cup servings
