Introduction

This is my take on refried beans - I use dried black beans and soak them - if I am short on time I substitute in 4 cans of black beans with liquid, but I omit the salt.
The chipotle pepper creates heat (do not minced - leave whole - for more heat add 2 chipolte peppers and or 1tsp red chillies - ground. This freezes well.

Ingredients

    3c dried black beans - soaked overnight in 9 cup water - water dis guarded then boiled in new water on stove for 90 min - reserve water
    or used 4 19 oz cans of black beans with liquid.
    5 cloves garlic minced
    1 1/2 tsp kosher salt (omit if using canned black beans)
    2 TB evoo
    1-2 CHIPOTLE PEPPER in adobe sauce
    (optional) 1 -2 tsp red chillies ground4 jalopenos minced
    2 med onions minced





Directions

3c dried black beans - soaked overnight in 9 cup water - water dis guarded then boiled in new water on stove for 90 min - reserve water.

Measure out 7 Cups of cooked beans, then add reserved cooking water to measuring cup so that the water line is at 7 cup plus a little. OR use canned beans with the liquid.

In deep sauce pan, heat olive oil, add onions, and jalapeno peppers (I run these thru my food processor so they are very fine) and garlic. Cook for a few minutes. Add black beans & liquid, and salt (if using) and the optional chillies.

simmer on very low heat for 30-45min (lid on) . - it will look a bit runny still. Mash mixture in pan with potato masher. Let simmer (uncovered) for another couple of minutes. Serve or freeze.
Makes 7 cups - nutrition is based on a 1/2 c serving.
