Ingredients

2 tbsp Grapeseed Oil
1 large Onion, finely chopped
1 tbsp grated fresh Ginger
1 tbsp Cumin Seeds
1 tbsp Garam Masala
1 tsp ground Turmeric
1 tsp Salt
2 med. sized Ripe Tomatoes, finely chopped
2 large Yams, finely chopped
1 large Cauliflower, chopped into bite sized pieces
Directions
Place the oil and onion in a non-stick skillet over medium-high heat and cook for 4 minutes. Add the ginger, cumin seeds, garam masala, turmeric, and salt and cook for 2 minutes. Stir in the tomatoes, yams, and water, cover the pan with a lid and reduce the heat to medium-low. Cook until the yams are tender, about 7 minutes, stirring occasionally.
Add the cauliflower, stirring to mix everything well. Put the lid back on and cook until the cauliflower is still somewhat crunchy, 5 to 8 minutes. Enjoy with rice or plain rotis.
