Introduction

This meaty-tasting meatless sauce offers excellent quantities of those vitamins and minerals often missing from a traditional meatless diet, and is in part "boosted" by using a prepared soy product sold nearly everywhere in North America. It's a delicious alternative to meat, and really makes this sauce filling and nutritious! If not available in your region, substitute with Textured Vegetable Protein (TVP), Boca Burger Crumbles, or your favourite soy-based protein.

Note: The sodium levels for regular canned diced and crushed tomatoes would be very high for those monitoring their sodium intake, so be sure to use fresh tomatoes or buy reduced salt canned tomatoes, tomato paste, and soy sauce.

Ingredients

    2 tsp Extra Virgin Olive Oil
    1 cup Onions, chopped
    1/2 cup Celery, diced
    1/2 cup Green Peppers, chopped
    3 cups Yellow/Orange/Red Peppers, diced
    2 cloves Garlic, crushed
    1 pkg Yves Veggie Cuisine - Italian Veggie Ground Round
    2.5 cups tinned Diced Tomatoes (no salt added) - about 1 1/2 -2 tins
    1 tin Tomato Paste (no salt added)
    1 tbsp Oregano, ground
    1 tbsp black pepper
    1 tbsp Basil
    1 tsp Tabasco Sauce
    2 tbsp Soy Sauce
    2 tsp Worcestershire Sauce
    1 tbsp Lemon Juice, bottled or fresh

Directions

Heat olive oil in large fry-pan at medium heat; add onions, celery, peppers, and garlic and gently fry for 5 minutes. Add Italian Ground Round; combine and fry for another 6-8 minutes. Add tomatoes and tomato paste; combine and let mixture cook at medium for 10 minutes (use a spatter screen if available), stirring frequently.

Taste for flavour at this stage; add herbs. If desired, add soy sauce, Worcestershire sauce and Tabasco sauce to taste. Stir and let simmer at medium-low for 10 minutes, stirring occasionally. Just prior to serving, add lemon juice (a chef trick to "brighten up" flavours!) and stir in.

Makes 6 generous portions; serve over pasta or rice, or cook a little longer to thicken and use for Sloppy Joes!
