Introduction
A deliciously yummy low-calorie, low-fat muffin with the sweetness of honey and the goodness of flax seed. A deliciously yummy low-calorie, low-fat muffin with the sweetness of honey and the goodness of flax seed.Number of Servings: 12
Ingredients

1 1/2 cup whole wheat flour
1/2 cup ground flax seed
1/3 cup honey
2 tsp baking powder
1/2 tsp salt
1 egg
2/3 cup low fat vanilla soy milk
1/4 cup crushed peanuts (optional)
Directions
1. Pre-heat oven to 400F.
2. Grease or line with muffin cups a 12 cup muffin tin.
3. Measure flour, flax seed, baking powder, and salt in a medium sized bowl and stir well to blend ingredients together.
4. In another bowl, beat egg and honey together. Beat in soy milk.
5. Add wet ingredients to dry ingredients, and stir just until all dry ingredients are moistened. Do not over mix.
6. Spoon batter into prepared muffin tin. Sprinkle crushed peanuts on top of muffins.
7. Bake for 15-20 minutes, or until risen and golden brown on top.
8. Remove tin from oven and turn muffins out on a rack to cool.
9. Enjoy!!
