but they still turned out good and tasted alright. the texture is perfect! but sorghum tastes a little like dirt to me... i'll have to try the rolls without it.
also, the site gives directions for mixing it by hand--i made these in my bread maker on the quick dough setting and they were fine. this is actually not my recipe, i stoll it from this site:

Ingredients

DRY:
1 cup sorghum flour or jowar flour
1 1/2 cups tapioca starch or potato starch (not potato flour!)
1/2 cup brown rice flour
1/4 cup buckwheat flour or millet flour
1/4 cup hazelnut flour or almond flour
2 tablespoons coconut flour
1 teaspoon xanthan gum
1 teaspoon fine sea salt
1 packet rapid rise yeast
2 tablespoons light brown sugar
WET:
3/4 cup milk
3/4 cup hot water
1/4 cup olive oil
2 eggs, beaten
1/2 teaspoon lemon juice or rice vinegar
Directions
combine dry ingredients (EXCEPT YEAST!!) in medium bowl set aside. add wet in bread pan, pour dry on top. make well in middle for yeast. set to dough setting and press start. when cycle is finished, scoop 1/4 C portions of dough into greases muffin pan and bake at 350* for 22 minutes or until golden brown.
