Ingredients

    1 1/4 C. flour
    1/2 C. brown sugar, packed
    1/2 tsp salt
    1/2 tsp baking soda
    1/4 tsp baking powder
    1 Tbs. vegetable oil
    1 large egg (beaten)
    2 large egg whites (beaten)
    3 medium bananas (mashed)
    1 C. dry oatmeal
    3/4 C chopped walnuts

Directions

Preheat oven to 350 degrees F. Stir together dry ingredients. Add oil and eggs and mix thoroughly. Add mashed bananas and oatmeal and mix well. Fold in walnuts. Pour batter into 12 muffin tins and bake until the top is golden and firm to touch, 40-45 mins. remove and cool on wire rack. Makes 12 muffins.

    I've made these three times, and they turn out wonderful. I only use 1/4 cup brown sugar and add a 1/4 cup splenda. - 2/22/08

    Windy, your muffins are great!!! i heated mine in the microwave & added just a touch of ICBINButter because that's how i eat all my muffins! Yours are so good i wouldn't know they were good for me if you hadn't said so! - 12/31/07

    Very Good
    very, very good!! I did tweek it a bit. I did 1c whole wheat flour with 1/4 c flour. subsituted applesauce for the oil and did 1/4c brown sugar & 1/4 c splenda instead. added 1 tsp cinnamon and 1/4 c. raisins. only baked for 35min at 350.
