Introduction

A delicious red sauce that is even better the next day, and goes particularly well with grated parmesan or romano.

Number of Servings: 6

Ingredients

    4 cups of chopped or sliced onions

    2 to 2.5 lbs of tomatoes - fresh or canned, whole, chopped crushed, or what have you. I prefer plain to seasoned

    1/2 a cup of olive oil

    1 tablespoon of salt

Directions

Sprinkle the chopped onions with the salt, and then cook slowly in the olive oil over medium-low heat until caramelized. The onions should be at the minimum a medium honey color.

When the onions are as caramelized as you have the time/patience for, add the tomatoes, and simmer for 30 minutes.

Serve over pasta, or however you like to use red sauce.
