Introduction

looks like a muffin, tastes like a dream. Great for lunch, but fancy enough to serve for brunch with friends! Ingredients

    6 oz chunk light tuna, well drained (I use those foil pouches)
    1/4 cup finely diced onion
    1/4 cup finely diced celery
    2 T finely diced red pepper
    2 T finely diced green pepper
    3 oz cream cheese, softened (30 sec in microwave)
    3 eggs, beaten
    3 oz cheddar cheese, shredded
    Creole or Bay seasoning to taste (abt 1/4 tsp)
    Dash cayenne pepper (optional)
    1 tsp baking powder (use kind w/o aluminum)

Directions

Heat oven to 350
spray muffin tin with no stick oil (or perhaps use paper liners - these were just sl. tricky to get out w/oil)
Use a fork to mix all ingredients together well in mixing bowl
Spoon into muffin cups - Ok to fill pretty high - they don't rise that much.
Bake 35 min or so, until knife comes out clean.
Cool and enjoy!

Makes 6 yummy muffins.
Serving suggestion - add a dollop of greek yogurt or sour cream plus sprinkle of chives or dill to each muffin.
Serve with a nice mixed greens salad and lemon juice/olive oil dressing.

    still tastes like tuna and i don't like tuna much....any suggestions ? do you eat them warm or cold ? I may try them with chicken too OK I JUST TRIED THEM WITH HORSERADISH SAUCE AND IT WORKS FOR ME ! THANKS - 2/16/16
