Ingredients

    16Tortillas, Ancient Grains, Dempster's whole grains
    1 can Black beans
    1 sweet potato baked
    8 lumps of frozen spinach steamed
    1 onion lightly sauteed in olive oil
    1 tbsp olive oil
    2 garlic cloves minced sauteed in olive oil
    1 cup salsa
    1 tbsp Sriracha Hot Chili Sauce
    .25 cup Jalapeno Peppers
    1 tsp Chili Garlic Sauce
    1 tbsp Chilpotle Sauce, Salsa, San Marcos
    .5 tsp. Cumin Powder
    1 tsp coriander powder
    2.75 tbsp Parmesan Cheese, grated
    4 oz Mozzarella Cheese, part skim milk


Directions

Bake sweet potato in the microwave using the potato button. Steam or microwave frozen spinach according to directions on package. Finish off sweet potato in the oven at 450 degrees if you like. Scoop out and add to your chopped and sauteed onion and garlic. Now add the spices, salsa jalapeņo peppers and black beans.

Assemble your wraps by first putting .5 tsp of Parmesan cheese and one tsp of shredded mozzarella over the wrap.

Put 1/16th of the mix on each wrap and fold into a wrap. Voila.

I like to freeze these in sandwich bags and then take them to work. If you have a microwave oven at work you can then zap for about 2 minutes and they are ready.

If the calories are too high for your plan you could probably make more smaller portions because they are quite thick.
