Introduction

This year, I'm having someone over for the Pesach seder that is allergic to nuts. I spoke to my son's preschool principal, and she gave me the Sephardic nut-free recipe that she uses at the school. I removed the grape juice and honey, because I felt it was sweet enough without it.

Just like with most Jewish cooking, the recipe called for a handful of this, and a handful of that. I've given approximations of what I used, so please adjust the measurements to your liking.

Ingredients

    Dried Apricots - about 1 1/2 cup to 2 cups
    Medjool Dates - about 16 of them, pitted
    Oranges - I used 3 oranges, but test the consistency after 2 oranges before adding the 3rd.
    Raisins - about 1 3/4 cups
    Apples - I used 5 apples (3 granny smith, and 2 pink ladies)

Directions

1. Core apples, and cut into about 8ths.
2. Make sure your dates are pitted.
3. Peel oranges.

4. In your food processor, chop all ingredients.
5. You will probably have to make this in batches, so make sure you combine each batch before adding in more ingredients (i.e. check after 2 oranges and 4 apples before adding the 3rd orange and 5th apple to see how you like the consistency).
6. Pop in the fridge, and cross something off your prep list for Pesach!

Serving Size: Makes 40 1/4 cup servings.
