Introduction

This is completely healthy, and sweet because of the stevia which is super concentrated and no calories! I got it at the health food store, and its not artificial. If you have regular stevia like TRUVIA, then add about .75-1 c. to equal about the same. completely Healthy! Ingredients

    1 c. whole whear flour
    1 c. flaxseed flour
    1 c. instant oatmeal
    1 tsp. pure stevia extract
    2 tsp. baking soda
    1 tsp. baking powder
    2 tbs. ground cinnamon
    1.5 c. shredded carrots
    2 apples
    .5 c. chopped walnuts
    .5 craisins
    .75 c. skim milk
    2 eggs
    1 tsp. vanilla

Directions

Mix all ingredients together, except milk, eggs, and vanilla. Mix thouroughly. Mix together liquid ingredients and then add to dry mixture. Fill cupcake holders almost full, and bake at 350 F for 20-23 min. Can freeze if you don't use within a few days.
