Introduction

Number of Servings: 12

Ingredients

    2 cups all purpose flour
    1/2 cup sugar
    1 Tbsp baking powder
    1/2 tsp salt
    grated lemon peel

    1 cup milk
    1/2 cup butter, melted or veg oil
    1 egg, beaten

Directions

Mix dry ingredients together in a bowl. Mix wet ingredients in another bowl. Add the dry to the wet and mix gently until moistened. Stir in 1 cup of blueberries or saskatoon berries. Pour into prepared muffin tins (lined or greased).
Bake at 400' for 20-25 minutes.

Serving Size: makes 12 large (but not jumbo) muffins
