Introduction
Lovely and light, just right with a salad or sliced tomatoes, this frittata is a snap to prepare and is wonderful for breakfast or dinner, hot or cold. Ingredients

6 Jumbo eggs
1 Cup Sliced mushrooms
1 TBL Dry Mustard
1 tsp Smoked Paprika
1 tsp Salt
1 tsp Ground Black Pepper
10 Spears Canned Asparagus
1/4 cup finely Shredded Cheddar Cheese
Directions
Preheat oven to 350 degrees.
Heat Oven proof skillet, (with a lid) and put the mushrooms onto saute. While they are browning, whisk the eggs and spices together with a couple TBLS of water or non fat milk until the yolks are completely incorporated. Lower heat of skillet to low, leave the mushrooms in the skillet and pour egg mixture over them. Lay asparagus spears on top in a wagon spoke fashion, evenly sprinkle the shredded cheese over all and sprinkle with a little more Smoked Paprika for color and added flavor if you wish. By the time you finish getting the aspapragus and cheese on the top, the bottom of the Frittata should be set. Place lid on skillet, remove from stove top and slide it into the oven for 10 minutes.
Remove from oven, slice into 4 wedges and serve.
