Introduction

There are plenty of variations on this recipe. I like to put cheese in the filling, and you can season the chicken however you like. It's pretty healthy and tasty to boot!

Also, because I cut it down to only 8 servings (it makes a LOT of crepes, and it's always way too much for two people), there's usually a lot of filling left, but I find that it's really delicious over steamed rice. :) If you want to make more crepes, the recipe multiplies easily!

Ingredients

    Filling:
    10 oz pkg chopped broccoli (cooked)
    1 can cream of chicken soup
    1/2 tsp worcestireshire sauce
    1/4 c grated italian blend cheese (or parmesan, whatever)
    2 c. cooked chicken

    Sauce:
    1/3 c. mayonnaise
    1 tbsp milk

    Crepes:
    1 egg
    1/8 tsp salt
    1/2 c. milk
    1/8 c melted butter

Directions

Whisk eggs and salt. Gradually add flour and milk. Beat in butter. Pour batter by 1/4 c into hot fry pan or crepe pan. Brown lightly on each side.

Mix ingredients for filling (broccoli, soup, chicken, and worcestireshire sauce). Fill each crepe and roll up. Place in 13x9 in pan. Mix 1/3 c. miracle whip with 1 tbsp milk and spread on top of crepes. Spring with 1/4 c of cheese.

Bake at 350 degrees for 20 min.
