Ingredients

1 1/2 cups GEMS flour
1 Tbsp instant yeast
1 1/34 tsp guar gum
1 tsp salt
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 1/8 cup warm milk
1/3 cup granulated sugar
2 tbsp melted butter
1/3 cup currants or raisins
1/4 cup glace fruit cake mix
Icing
Mix 1/3 cup icing sugar, 1 tsp milk, 1/4 tsp vanilla extract. Place mixture in a small pastic bag, snip a tiny corner and squeeze the mixture gently out of the bag to form a cross on each bun.
Directions
1. Preheat oven to 350 degrees. Lightly grease a muffin tin.
2.In mixing bowl blend GEMS flour, yeast, guar gum, salt, cinnamon and nutmeg.
3. In a 2 cup measure combine the milk, sugar and butter. Add to dry ingredients and beat to a thick, creamy consistency with hand mixer. Stir in currants and fruit.
4. Spoon 1/4 cup of dough into each muffin cup.
5. Let rise 45 m inutes in draft-free area.
6. Balek 15 to 18 minutes. Remove to rack.
7. Apply icing while buns are warm.
Makes 10 muffins.
