Introduction

This pizza dough is a higher protein version of the usual 1/2 whole wheat 1/2 all purpose flour kind. It taste great and is worth the extra trouble. Ingredients

    1.5 cup all purpose flour
    1.5 cup white whole wheat flour
    .5 cup whole grain buckwheat flour
    .5 cup whole soy flour
    2 tablespoon vital wheat gluten
    2 tablespoon canola or olive oil
    2 teaspoon bakers yeast
    2 tablespoon sugar
    1.5 cup warm water
    2 teaspoon salt

Directions

1) dissolve the sugar in the warm water. add the yeast and wait 10 minutes for the yeast to activate and foam.
2) add all the dry ingredients and mix with a wooden spoon.
3) when the mixing no longer helps, knead the mixture into a dough (should take less than 5 minutes.
4) let dough rise and at least double in size before using.
5) flatten into pizza crust and use as usual.

Serving Size: make 2 large pizza pies
