Introduction

Ingredients

    3 lbs chicken breast tenders, no skin, no fat
    1 Pkg Taco Bell taco seasoning mix
    1 14.5 oz can diced tomatoes
    1 cup instant brown rice
    2 cups tap water

Directions

Makes 9 - 1 cup servings.
Place uncooked chicken into crockpot. Put taco seasoning on top of chicken and stir to coat. Put tomatoes on top of chicken. Add rice. Add water. Cook 3 hours on high. Can cook longer on lower setting. Finished when most of water has been absorbed and chicken is white. Shred chicken with fork. Serve.

    Very good. I use organic skinless boneless chicken thighs. I use 1 and 1/2 lbs. 3/4 cup jasmine brown rice. 1/3 package of trader joes taco seasoning. 1can of Trader joes fire roasted diced tomatoes. 2 cups water. Its easy and lots of flavor. - 2/18/12
