I made this up last night. It tasted Really Good! I made this up last night. It tasted Really Good!
Number of Servings: 4


    1 can sweet corn, rinsed
    1 can black beans, rinsed
    1 can black olives, rinsed and diced
    1 can Diced Tomatos with chilis
    2 tbsp chili powder
    3 8 inch flour tortillas
    6 subs shredded lettuce (romain)
    1 cup cottage cheese


Preheat your oven to 400F. Take 2 oven safe bowls and spray with non stick. Push a tortilla into each bowl and put into the oven for 5 - 10 minutes. Keep checking on them so they don't burn. They are done when they hold their bowl shape. Repeat with other two tortillas.

Rinse all canned foods except the tomatoes and add to a big pan. (You can use a fork to squish up the black beans if you want but it's not necessary; its a texture thing). Add your seasoning and set on medium to warm everything up.

When the tortillas are done fill each one with 2 cups lettuce, 1 cup filling, and 1/3 cup cottage cheese. Enjoy!
