Introduction

Ingredients

    3 tbsp Braggs Soy Seasoning
    1 1/2 tbsp minced ginger
    2 tbsp white wine
    2 teaspoons cornstarch
    3 cloves garlic
    1 1/2 tsp sesame oil
    1 tbsp canola oil
    .5 cup sliced leeks
    3 carrots chopped
    1 cup shiitake mushrooms sliced
    1 cup collard greens finely chopped
    1 cup kale finely chopped
    1 cup snap peas, finely chopped
    1/2 block xtra firm tofu

Directions

Mix first 6 ingredients and set aside. Saute carrot, leek, and mushrooms in canola oil for 2 minutes. Add other vegetables and saute 2 more minutes. Add tofu saute 1 minute. Add the additional ingredients and stir 1 minute.
I serve this on rice paper wraps with homemade peanut sauce. You can replace the collards and kale with napa cabbage.
