Introduction
These are fantastic! I modified a recipe from another user and even my husband and son thought it was great. You can make a full quiche or make the muffins like I do. I find the muffins are easy for serving portions and just pulling out of the freezer or fridge and warming up! These are fantastic! Ingredients

1 Cup Onion chopped
1 Cup Mushroom chopped
5 Garlic cloves minced
1 package frozen spinach
1/4 Cup Green Chile
3 Eggs
4 Egg Whites
1/2 Cup Whole Wheat Flour
1/2 tsp Baking Powder
1/2 tsp Kosher Salt
1 1/3 Cup 2% Milk
1/2 Cup Shredded Cheddar Cheese
1/4 tsp Garlic Powder
1 tsp Parsley
1/2 tsp Savory
Directions
Preheat oven to 400F
Lightly grease a muffin pan
In a medium frying pan, cook diced onion, garlic and mushrooms. Add a pinch or so of your Kosher Salt to saute with it. I spray Pam cooking spray.
Set aside to cool for a few minutes
In a large bowl whisk together eggs, flour, baking powder, garlic powder, parsley, savory and remaining salt. Whisk in milk then onion garlic mushroom mixture, green chile, cheese and spinach.
Evenly divide batter into muffin tins.
Bake for 25 minutes or until center is set and golden brown.
Serving Size: Makes 12 Muffins
