Ingredients

    2 Tbls grapeseed, olive, or coconut oil
    4 ears of corn, cut off the cob
    2 cloves garlic, diced
    2 Tbls cumin
    1 Tsp cheyenne powder or to taste
    1 Tsp Chipoltle powder or to taste
    1 large purple onion, chopped
    1 jalapeno diced
    4 cans black beans, drained
    1 lime juiced
    1 bunch cilantro chopped
    1 bag or 2 mangos chopped

Directions

Heat oil in skillet. Add corn and cook for about 5 minutes, stirring occasionally. Add cumin,cheyenne, and chipoltle to corn and mix well. Take off the heat and let cool.
Add everything else to a bowl and mix well. Add corn once it has cooled and mix up again. It's that simple!
