Ingredients

2 tbsp olive oil
3 boneless, skinless chicken breasts, cubed
1 onion, chopped
3 cloves garlic (i don't use cuz of hubby)
2 tsp ground coriander
1 1/2 tsp ground cumin
1 tsp chipotle chili powder (I just did a dash)
1/4 tsp pepper (salt to taste... I didn't use any)
1 can (19 oz/540 ml) white kidney beans, rinsed & drained
1 can (19 oz/540 ml) red kidney beans, rinsed & drained
2 tbsp all purpose flour (I used Robin Hood Gravy Flour and just a couple of shakes of it)
2 tbsp lime juice
fresh cilantro to garnish
Directions
1. If you want, brown chicken in skillet with a bit of olive oil... then put in Slow Cooker.
2. Put a bit more oil in pan. Fry onion, garlic, coriander, cumin, chili powder, salt and pepper. medium heat until onion is softened. Scrape into crock pot with beans. Stir to combine.
3. Cover and cook on low 4 - 5 hours.
4. About 15 minutes before done, sprinkle Robin hood Gravy Flour onto mixture and stir (or make a flour thickener with water and flour, then put it in).
5. Stir in lime juice.
6. Serve with brown rice and garnish with coriander.
