    Thyme, fresh, 2 tsp (remove)
    Olive Oil, 1 tbsp (remove)
    Lemon Juice, 50 mL (remove)
    Garlic, 3 cloves (remove)
    Onions, raw, 2 medium (2-1/2" dia) (remove)
    Lamb Shank, 1200 (remove)
    Chicken stock, home-prepared, 1 cup (remove)
    grated lemon rind, 1 tsp (remove)


Directions


Preheat oven 180degrees celcuis
Heat oil, brown lamb and set aside. Meanwhile saute onion and
garlic add lamb, chicken stock and 6 sprigs of thyme into casserole dish cover. Reduce heat to 150 degrees celcuis and
cook for 1 1/2 hours. For last half hour remove lid to thicken
