Ingredients

1 large navel orange
1/4 cup newmans own sesame ginger dressing
2 tbsp lite soy sauce
2 tbsp sugar
1/2 tsp crushed red pepper
1 lb. boneless skinless chicken thighs, cut into bite sized pieces
2 cloves garlic - minced
2 red peppers, cut into bite sized pieces
16 oz. baby bella mushrooms
Directions
Grate 1 tsp zest from orange. Cut peel and white pith from remaining orange. Cut orange into bite sized pieces.
Mix zest, dressing, soy sauce, sugar, and crushed pepper.
Cook chicken and mushrooms in nonstick skillet on high heat 5 to 6 minutes, or until done, stirring frequently. Add garlic, cook and stir on medium-high heat for 2 minutes. Add red peppers, cook 2 minutes until crisp tender. Transfer to a bowl & keep warm.
Add dressing mixture to skillet. Cook and stir 1 to 2 minutes or until thickened, stirring constantly. Add chicken mixture. Cook and stir 2 minutes or until heated through. Stir in oranges and serve.

I made this last night. A few slight changes, Chicken Breast, added Shallot, and A LOT more garlic! I didn't feel like dirtying another dish so I didn't remove the cooked chicken. Should have drained the pan of the water released b/c the sauce was a bit runny. Tasted wonderful. Served w/ Brown Rice - 5/4/11
