Introduction
Took a regular Oatmeal Cookie recipe and modified it to use whole grains and replaced 1/2 the butter with applesauce and a tablespoon of butter with olive oil/canola oil blend. Repalced sugar with splenda and some brown rice syrup. Feel free to use a little extra splenda. maye want ot use whole wheat pastry flour that ground finer. Ingredients

Flour, whole grain, 1.5 cup*Quaker Quick minute Oatmeal plain w/water, 3 cup
Sucralose (like Splenda), 36 tsp
Rice flour, brown, .5 cup
Applesauce, unsweetened, .5 cup
Butter, salted, (SOFTENED) .33 cup
*Extra Light Olive Oil, 1 tbsp
Brown Rice Syrup, 2 tsp
Egg substitute, liquid (Egg Beaters), .25 cup
Egg, fresh, 1 large
Cinnamon, ground, 1.5 tsp
Vanilla Extract, 1 tsp
Baking Soda, 1 tsp
Salt, 1 tsp
Walnuts, .5 cup, chopped
Directions
Mix Liquid ingredient together. Mix Dry ingredients together. Stir dry ingredients slowly into liquid.
Place round balls on ungreased cookie sheet. Bake 7-9 minutes or until bottom is golden brown. Do not overcook (I hate overcooked cookies).
