Ingredients

    .5 cup Egg Substitute (like Egg Beaters)
    .25 tsp Cayenne Pepper
    .5 tsp Fiesta Party dip mix or Taco Seasonings
    3 tbsp Shredded Cheddar Cheese
    3 tbsp Salsa
    1 tbsp Sour cream

Directions

Use nonstick butter spray and lightly coat a microwavable coffee mug. Pour .5 cup Egg Substitute in, add spices, cheese, and 1 tbsp Salsa. Gently stir. Microwave for apx 1 minute. Stir gently, and continue to cook another 45-50 seconds.

Stir in salsa and top with tbsp of sour cream. (This is also great transferred to a whole wheat tortilla for a quick and easy breakfast wrap - however, the nutritional info does not include a Tortilla!)
