Number of Servings: 4

Ingredients

    2 tblsp fat free mayo
    1 tblsp fat free sour cream
    1 tablespoon white wine vinegar
    1 tsp of sugar
    2 cups of broccoli coleslaw mix
    1 lb of catfish cut into 2.5 in strips
    2 tblspn of fat free milk
    .25 cup of cornmeal
    2 tsp of cajun seasoning
    1/2 tspn of salt (i suggest less it was a little salty)
    1/8 tsp of cayenne pepper
    2 tspn olive oil
    4 kaiser rolls, split

Directions

whisk mayonnaise, sour cream, vinegar and sugar until smooth. Blend with coleslaw mix.

In shallow bowl, toss fish with milk.

In large ziploc bag, combine cornmeal cajun seasoning, salt and cayenne. Add catfish and shake.

Heat oil in non stick skillet over medium heat. Cook fish 4-5 min per side or until fish flakes easily and coating is golden brown. Spoon coleslaw onto rolls and top with fish.
