Introduction
In my search for the ultimate nutrient-packed kid-friendly dishes, I've created these salmon patties that make a great nutritious burger when served on whole wheat buns with a bit of mayonnaise and french mustard. Ingredients

Mirepoix, 4 oz
Capers, 2 tbsp, with a little juice
Bread crumbs, dry, grated, seasoned, .5 cup
Milk, 2%, .5 cup
Lemon Juice, 1 lemon yields
Olive Oil, 1 tbsp
Egg, fresh, 2 large
Salt, .25 tsp
Atlantic Salmon (fish), 2 fillet
Beans, black, 1 cup, drained
Flour, .25 cup
Directions
Measure bread crumbs, salt and milk into a bowl and mix well. Set aside.
Saute mirepoix on medium high heat in 1 T olive oil for 5 minutes and allow to cool.
Stir bread crumb mixture and add lemon juice, eggs and capers.
Pulse cooled mirepoix in food processor with remaining olive oil. Add roughly sliced raw salmon fillets to process for 1 minute. You may need to stir it down once or twice.
Add bread crumb mixture and beans to processor and process until mixture is well blended - again stirring down once or twice.
Scrape salmon mixture into a bowl and slowly mix in flour until a slightly thick consistency is reached. It will still be sticky but hold it shape.
Drop 1/4 cup portions into canola oil heated to medium high heat in a large frying pan. Spread with a spoon to form patties. Brown each side - about 1-2 minutes each and remove to a paper towel-lined plate.
