Ingredients

1 lb. Gnocchi
3 T. Olive Oil
1 lb. Green Beans, trimmed and cut into bite sized pieces
8 pieces Sun Dried Tomatoes, minced
3 cloves Garlic, minced
4 oz. Chevre, crumbled into small chunks
Salt & Pepper to taste
Directions
Set salted water to boil for gnocchi. When the water is boiling, add the gnocchi and cook according to package directions.
While the water is heating, trim the green beans and snap into bite-sized pieces. Heat olive oil over medium-high heat in a large skillet and add green beans. Saute for 2 minutes and add sun dried tomatoes and season with salt and pepper. Saute 2 more minutes, add minced garlic, and cook until garlic is just tender and fragrant, reduce heat to low and add drained gnocchi. Toss to combine. Remove from heat and crumble chevre over top. Serve hot.
