Introduction

This is an easy skillet dinner you can make with ground turkey, beef, or chicken. I used chicken because it is the leanest. If you scale down the proportions, it is also great for a tasty lunch. Ingredients

    1 lb lean ground turkey, chicken, or beef
    15 oz can tomato sauce
    1 package taco or burrito seasoning mix
    1/2 cup chopped green/and or red bell pepper
    1 1/4 cup elbow macaroni
    1/2 cup shredded 2% cheddar cheese
    1 cup water

Directions

Coat a deep 12-inch nonstick skillet or a 4-quart saucepan with cooking spray, and preheat over medium heat. Add the turkey and cook for about 4 minutes, stirring to crumble, until no longer pink.
Stir in all of the remaining ingredients, except the macaroni and the cheese, and mix well. Increase the heat to high, and bring to a boil. Stir in the macaroni, and reduce the heat to low. Cover and simmer, stirring occasionally, for 10 to 12 minutes, or until the pasta is tender.
Divide the mixture among individual serving bowls and serve immediately, as is or topped with the Cheddar cheese.
