Ingredients

1 pound fingerling potatoes
1 tablespoon olive oil
½ teaspoon salt
Fresh ground pepper, to taste
1 tablespoons chives, chopped
Directions
1. Preheat oven to 425 degrees.
2. Line a baking sheet with foil. Add the potatoes. Cut larger ones in half. if necessary.
Drizzle olive oil over the top of potatoes and toss to coat. Sprinkle with ¼ salt and pepper.
3. Roast in oven for 25 minutes. Remove from oven, turn over, sprinkle with ¼ teaspoon salt and pepper and continue to roast for about 20 minutes until golden brown and soft.
4. Remove from oven and sprinkle with chopped chives. Add more salt and pepper, if desired.
