Introduction

This recipe, closely related to Iranian mast-o-khiar, is a cucumber salad, strongly flavored with garlic and dill, and meant to be served as a dressing for gyro sandwiches. Now, rest assured, there are as many TYPES of gyro as there are cooks. Some use cubed meat, some use a strongly-spiced meatloaf. Mine uses Seitan roll. Ingredients

    Tofutti milk-free Better Than Sour Cream, 6 oz
    Juice of 1/2 lemon (ZEST THE PEEL!!!)
    Garlic, 3 cloves
    Onions, raw, .25 cup, chopped
    Olive Oil, 1 tbsp
    Dill weed, dried, 1 tsp
    Pepper, black, 1 tsp
    Salt, .5 tsp
    1 large, peeled, sliced Cucumber

Directions

Except for the cucumber slices, place all ingredients in a small food processor or blender. Process until just a little chunky...not HUGE chunks, but not totally smooth, either.

Pour a bit of dressing into a tightly-sealing bowl. Place a layer of cucumber slices in the dressing; pour another layer of dressing over the cucumber slices, and spread thin. Repeat, until all cucumbers are used. Pour the rest of the dressing over that, and seal. Place in refrigerator to chill.

Serve with seitan gyros, or as a salad.
