Goat cheese, Red Pepper and spinach filling

    1 Chicken Breast Boneless Skinless Wegmans

    1 oz Goat Cheese, Semisoft

    1/4 cup Spinach, fresh

    1 tbsp Wegmans Roasted Red Pepper Bruschetta Topping

    3/4 tsp Gourmet Garden Basil Herb Blend

    Salt and pepper


Flatten chicken breast to 1/4 inch and place the smooth side down. Sprinkle with salt and pepper. Spread goat cheese, spinach and red pepper bruschetta toppping in middle of chicken leaving room on the outsides for folding. Roll Chicken from small side forming a long roll. Secure with toothpicks. Rub basil herb blend over the roll. Grill for about 10 minutes total (few minutes on each side). Serve.

Optional: Cut chicken into 1in slices to show off the rolled style

(This is a slightly changed recipe from my Grill Masters book. It called for basil pesto instead of basil spread. Both sound good but pesto has a few more calories than just plain basil. It also calls for arugula instead of Spinach but the supermarket didnt carry arugula)
