Ingredients

    1 head of Boston lettuce, washed and separated
    1 med red onion, finely chopped
    2 grilled red peppers, chopped
    2 170g cans tuna, in pieces and drained
    200g feta cheese, crumbled

    Dressing:
    1 garlic clove
    2 tsp Dijon mustard
    1 tbsp balsamic vinegar
    1/4 cup 35% cream
    1/4 cup extra virgin olive oil
    salt & pepper

Directions

Divide lettuce onto 4 plates. Garnish with onion, red pepper, tuna & cheese.

With an electric mixer, thoroughly blend garlic with mustard, balsamic vinegar and cream. Add the oil gradualy to obtain a smoth and consisten dressing. Add salt and pepper to taste. Pour the dressing over the salads and serve.
