This is so easy and delicious; the radishes become sweet and tastes nothing like the raw ones. You can also add fresh basil and parsley along with the dried. This can be prepared early in the day. Ingredients

    1 medium red pepper cut into strips
    1 medium orange pepper cut into strips
    1 medium yellow pepper cut into strips
    1 medium yellow zucchini sliced about 1/2" thick
    5-6 asparagus stalks cut into 1" pieces
    4-5 radishes cut in half or quarters if large
    2 garlic cloves finely minced
    1 tbsp dried parsley
    1 tbsp dried basil
    Salt & Pepper to taste
    2-3 tbsp extra light olive oil (or enough to coat vegetables
    2 tbsp parmesan cheese (optional)

Directions

Place all ingredients ( except parmesan cheese )in a large bowl. Let marinate for 1/2 hr or longer. Drain oil if needed. Have your grill set on medium high. Place vegetables in grilling basket. Stir often. Grill until tender but still slightly crisp - about 10-15 min. Place in serving dish and sprinkle with parmesan cheese if you wish.
