Ingredients

    small - medium tomato (i used beefsteak)
    1.25 c corn ( I used canned and rinsed first)
    3 tbsp fresh chopped cilantro
    1 can chick peas ( I used low sodium and rinsed them first)
    Just over half of one avocado, chopped
    1.5 tbsp lime juice
    salt to taste

Directions

Chop avocado and tomato into small cubes. Finely chop cilantro.

Mix chopped veggies with chick peas, corn, and cilantro. Toss with lime juice and salt to taste.

Serving Size: Makes 5 servings
