Introduction

Spray 9 x 13 inch glass dish with butter flavored cooking spray. Add potatoes and cheese to prepared pan. Set aside.

In a bowl whisk together eggs, milk, Mrs. Dash, salt, pepper and garlic. Pour over the potatoes. May cover and refrigerate overnight before baking.

Bake for 45 to 55 minutes 400 degree oven or until eggs are set in ceenter. Let cool on a wire rack for 5 minutes before serving.

May also add 1 1/2 c of chopped ham, turkey, or shrimp

    1 1/2 c Colby and Jack Cheese shredded
    6 eggs
    2 3/4 C 1% milk
    1 1/2 tsp salt free all purpose seasoning (Mrs. Dash)
    3/4 tsp salt
    2/3 tsp black pepper

Directions

Bake 400 degrees 45 to 55 minutes or until eggs are set in center. Let cool on a wire rack for 5 minutes before serving.

    The only thing that I did differently was that I browned the hash browns beforehand to give it a crunchy bottom. Great brunch recipe!!! :) - 6/20/11
