Introduction
I wanted to try spelt berries, so I made something I know I would love, a bowl full of sauted veggies. Ingredients

1 cup of dried Spelt Berries - Cooked
1 tsp of Olive Oil
1/4 cup onion - diced
1 clove garlic - diced
1/2 a large bell Pepper - diced
1 Medium Zucchini - diced
2.5 cups Broccoli - chopped
2 Roma Tomatoes - chopped
Dash of Italian Seasoning
Dash of Parsley
Dash of salt & pepper
Dressing
1 Tbsp of Olive Oil
2 Tbsp of Balsamic Vinegar
1 tsp of Parsley
1 tsp. of salt
Black Pepper to taste
Directions
Cook your grain according to directions on package. (For added flavor cook in broth instead of water)
In a frying pan, add 1 tsp of Olive Oil. Add your onions and garlic and saute till transparent about 3 - 5 minutes.
Add the bell pepper, zucchini, broccoli and cook for about 5 minutes.
Sprinkle with Italian Seasoning, Salt & Pepper. Add your tomatoes and cook for a few minutes.
Add your spinach and cook until wilted, about 3 minutes.
Add your grain, mix all together and then pour into serving bowl.
I didn't mix my dressing, I just poured 1 Tbsp of Olive Oil, 2 Tbsp of Vinegar, Parsley and Salt & Pepper to taste.
Toss together and taste to see if you need any other dressing.
Serve warm or cold.
Note: You can use your own Italian Dressing instead of making this one.
