Ingredients

    18 oz beef stew meat, broil-browned and drained
    1 1/4 c. sliced zucchini
    2 c. sliced summer squash
    1 c. sliced carrots
    2 stalks celery
    1 c. sliced mushrooms
    2 T. Better-than-bouillon beef base
    1/2 c. dry black japonica rice
    2 cans diced tomatoes (7 c. total)
    4 c. water

Directions

1. Combine everything in a crockpot.
2. Cook on high for 3 hours.
3. Let set for an hour.


Makes 12 1-cup servings.
