My breakfast bread went bad, my banana's are over ripe. Oh what is one to have with breakfast? Ahhh, a nice sweet, low calorie, low fat Blueberry Banana Bread. It will go perfect with my eggs. Ingredients

1 cup all-purpose flour
1/2 cup whole wheat flour
1/2 cup sugar
1/2 tsp. Vanilla Extract
2 1/2 teaspoons baking powder
1/2 teaspoon salt
Dash of Cinnamon
1/2 cup oats
1/2 cup of egg substitute
1/2 cup unsweetened applesauce
3 mashed very ripe bananas (approximately 1 cup)
1 cup fresh or frozen blueberries
Directions
1 Mix together dry ingredients until well combined.
2 In a separate bowl, mix eggs, applesauce, and bananas.
3 Stir banana mixture into flour mixture, and then add blueberries.
4 Stir carefully (the blueberries crush easily).
5 Bake in a greased loaf pan or (3 mini pans for 30 minutes) for approximately one hour at 350°F.
6 Bread is done when a toothpick comes out clean.
Serving Size: 12 slices
