Ingredients

    2 cups rotini pasta
    1/2 pound Italian sausage (hot or mild)
    1/2 pound cooked shrimp
    1 pkg (6 oz or 7 cups) baby spinach leaves
    1 can (14.5 oz) diced tomatoes w/ basil, garlic, and oregano undrained
    1 cup shredded mozzarella cheese
    2 tbsp grated parmesan

Directions

Cook pasta as directed on package. Drain and set aside when done. Brown sausage and crumble with wooden spoon. Cook on med-high 10-12 minutes; drain. Stir in spinach and tomatoes; cook 2 minutes or until spinach is wilted. Add drained pasta, cooked shrimp, and cheeses. Toss to mix. Cover and let rest for 2 minutes.
