Introduction

Ingredients

    2 oz. Colby Cheese

Directions

Shred 2 oz. of colby cheese (you can substitute other varieties, of course). Place wax paper on a microwave tray or dish. I use the glass turntable in our microwave for this. Place pinches (no bigger than a quarter) of the shredded cheese on wax paper, spacing them about 2 inches apart. Place the tray/dish in the microwave and cook for 1 to 2 minutes (depending on your oven) until the cheese spreads out into a little cracker and begins to brown on the edges. Remove the wax paper and peel off the "crackers." These are delicious replacements for regular snack crackers or chips. Serve with salsa or yogurt veggie dip or whatever you like. They are great with tomato soup, too!
