Ingredients

    Dried beans, black, 2 cup
    Water, tap, 12 cup
    Onions, 2 medium
    Carrots, 2
    Celery, 2 stalks
    Spices: Cumin, chili powder, crushed red pepper, garlic powder to taste (about 2 Tbsp total)
    Lemon juice to taste (a few Tbsp)

Directions

Makes about 8 1.5-cup servings.

Rinse the beans well and put them in a large pot. Add 6 cups of water and let soak overnight.

The next day, add the other 6 cups of water and bring to a boil.

Meanwhile, chop the vegetables and add them to the pot. Add the spices except for the lemon juice.

When the soup boils, skim any foam from the surface. Turn it down to a simmer.

Simmer until the beans are soft, about 1.5-3 hours, tasting and adjusting the seasoning every hour.

Remove from heat and stir in lemon juice.
