Introduction

Number of Servings: 25

Ingredients

    2 tbsp olive oil
    1 cup diced onion
    2 tsp minced fresh garlic
    grated jalapeno ( i used 1/4 of a medium sized...)
    15 oz can of diced tomatoes (low salt preferred)
    6oz can of tomato paste
    4 tbsp pancake syrup (lite)
    1/3 cup palm sugar

    Pineapple juice (The juice from one can of crushed pineapple) + cider vinegar to equal 1/2 cup

    4 tbsp Lea & Perrins, Worcestershire Sauce(it is gluten free)
    1 tsp garlic powder
    1/2 tsp ground ginger
    salt and pepper to taste

Directions

cook onions and garlic in oil...add tomatoes, tomato paste,sugar, syrup and all the rest of the ingredients...adjust to personal taste....bring to boil and simmer for 30 min.....baste meats towards the end of their cooking time.....enjoy.

Serving Size: Not sure how much...i basted 6 hind quarters and have enough sauce to baste more this weekend...much more
