Ingredients

    1 package ground turkey (19.2 oz.)
    1 small onion, chopped
    1 half green bell pepper, chopped
    1 1/2 cup frozen corn
    1 can great northern beans
    1 can kidney beans
    1 can chopped tomatoes
    1 can fat free chicken broth
    1 cup whole grain brown rice
    Chili powder, cumin and cilantro to taste or you can add a packet of taco seasoning instead
    about 4 cups water

Directions

Spray a large pot with cooking spray. Brown ground turkey. Add onion and green pepper, saute till soft. Add all other ingredients except rice. Bring to a boil. Turn heat to low, cover and simmer for 1 1/2 hr. Stir occasionally. Add more water if necessary. Add rice, cover and cook for another half hour or until rice is done.
