Ingredients

    Butter - 35g
    Flour - 50g
    Semi-skimmed milk - 25 fl oz
    parsley, fresh or dried, chopped - 4 tbsp
    chives, fresh or dried, chopped - 2 tbsp
    lemon juice, fresh or concentrated - 3-5 tsp


Directions

Most of these ingredients can be amended if you like, as they really depend on your personal taste. prepare the ingredients beforehand so that your sauce does not burn.

melt the butter in a saucepan, and add the flour. mixing in using a whisk.

add the milk a LITTLE at a time, mixing well after each addition, until your sauce is as thick as you desire.

keep the sauce over the heat, while stirring regularly, for at least 5 minutes.

add the lemon jiuce, parsley and chives, again to taste.

pour over fish

this should serve between 4 and 6 people.
