Introduction

Ingredients

Starter Ingredients:
1 c Whole Wheat Flour, 1 cup
1/8 t Yeast
.5 cup cool Water, tap
Additional Ingredients:
3.5 c white flour
cup lukewarm Water, tap
Salt, 1.5 t
1/4 t yeast
Egg wash:
1 large egg white
.5 c cool water
Directions
First make the Starter. Mix well 1 c whole wheat flour w/.5 c cool water and 1/8 t yeast. Cover and leave out until next day.
Add 3.5c white flour, 1/4 t yeast, 1.5 t salt and 1 c lukewm water.Mix until cohesive, knead 7 min on med speed, or 10 min by hand. Load mixture into large greased measuring cup and let rise 1 hr.Gently remove and deflate. Return, let rise 1 hr. deflate again. Let rise 1 hr(3 hr ttl). Turn onto greased surface & form 12 balls. Put on greased parchment paper on pan; cover & let rise 1-2 hr. puffed up but not doubled. Gently cover w/greased plastic wrap and refrig 2-3 hrs. (cool rise). At end of time, preheat 425.Whisk together 1 lg egg white and 1/2 c cool water until frothy.Brush rolls.Slash the top of rolls and bake 20-25 min til golden brown. For best crust, turn oven off when done,open door,leave rolls in.
