Ingredients

    Milk, 2%, 1.5 cup
    Cheddar Cheese, 2 cup, shredded
    Monterey Cheese, 2 cup, shredded
    Cream Cheese, 8 oz, softened
    Garlic Cloves, 3, diced
    Scallions, raw, 1/2 cup, chopped
    Spinach, frozen, 1/2 of a 10-ounce package
    Dry Mustard, 1 tsp
    Pepper, red or cayenne, 1 tsp
    Garlic powder, 1 tsp
    Pepper, black, 1 tsp

Tips

This is not a diet food. I developed this recipe using several I have found and came up with the perfect combination. Great for special occasions or occasional splurge.


Directions

In fondue pan, use whole garlic clove and rub fondu pan on bottom and sides. Add cream. Add cheeses slowly, starting with cream cheese and make sure to use whisk to thoroughly mix together. Add other cheeses using spoon in a figure 8 pattern to incorporate. May need additional cream and/or water to loosen mixture. Add in green onions, spinach, mustard, cayenne, garlic powder and black pepper. Continue cooking until well blended.

Serve with your favorite low-carb vegetables. May also be served with grilled meats, which are cut into pieces. For non-low-carbers, you can serve with cooked potato wedges, chips or french bread cut into cubes. Enjoy!

Serving Size: Serves 8-10 as an appetizer
